Panko Breaded Baked Chicken

This is one of the easiest baked chicken recipes to make and what makes it wonderful is that the kids really enjoy it and ask for it often. The kids call it our  "go to" chicken recipe as when we can't figure out what to cook, this is the dish that is normally served. Sometimes I will do a chicken breast or slice it into the size of tenders --- either way, it's a hit at our house. You can serve ... Read More Here...

Roasted Baby Beets Glazed with Balsamic, Orange and Mint

Five minutes from my front door is a little slice of paradise.  Gilcrease Orchard is a non-profit farm that grows a wide variety of fruits and vegetables and opens up for the public to harvest the fresh produce.  I went last week and picked out of the ground fresh baby beets, baby carrots, arugula, kale and garlic scapes (something I haven't tried before). Look later for recipes for what I did ... Read More Here...

La Casita Blanca – San Juan, Puerto Rico

When we driving around San Juan trying to find La Casita Blanca, I was really doubting our GPS that we were in the right place. It's located in a residential area with small shops and stores and not a lot of other restaurants. We finally found it, parked, and as I was getting out of the car I saw a happy man leaning outside a window smiling and waving us to "come on inside." Still doubting we ... Read More Here...

Chillis at Home Meals | Perfect for After School

Thank you to Bellisio Foods for sponsoring this post and keeping my meals tasty and bold! School is back in session and my kids are attending college from 8 in the morning and get home around 4 in the afternoon. Even with lunches both came home "starving" and scrounging in the pantry for a "quick and easy meal." Normally their go to snack is chips and salsa (and lots of salsa). Both kids love ... My Trip With Mexican Coke

My daughter and a few friends are Mexican Coke addicts. Often you will see them at Costco buying it by the case since it's a bit cheaper to buy it in bulk. Recently, I was fortunately enough to be invited on a press trip to Karisma Generations in Riveria Maya to experience the hotel and all of the amenities they offer their guests. Guess what I found upon my arrival to the resort?! Since ... Read More Here...

Family History | Going Back to Our Roots

I love puzzles. As a child, teen, and even as adult you would find my nose in a book doing crossword puzzles, logic problems, and MENSA tests. Dolls were not for me as I like to solve problems and even to this day "I am known for solving problems." (For OTHER people!) When I was dating Bob and computers were starting to become popular (yes... THAT long ago), I even had puzzles and games on my ... Read More Here...

Bacardi Rum Factory Have you ever looked at a bottle of Bacardi rum ... Read More Here...

The Farm Las Vegas | Local Honey, Fresh Eggs…

Living in the northwest area of Las Vegas often gets an eyebrow raised as most people prefer to live in Henderson or the Summerlin area. Not me! I want to be near the mountains, above the The Strip for awesome views, and large lots for homes. Yes, it's a bit more "rural" than other parts of town but that is A-OK with this family as we enjoy the amenities that come along with living here. One ... Read More Here...
